It’s better to immediately take a plate on which you will cut the finished cakes so that they all turn out to be approximately the same size. Naturally, it won’t come out round when rolled out. But this is not scary, because... We will need samples to decorate the cake.
When all the cakes are ready, place them one by one in an oven preheated to 180 degrees. They bake very quickly, about three minutes. It’s important not to miss it, keep an eye on them, they should darken and brown slightly, don’t overdry them. Takes it out and immediately cuts it according to the prepared shape.
Place the finished shortcakes on the table and let cool.

Cream for honey cake:

  • Condensed milk - 2 cans
  • Butter - 250 grams

I always take condensed milk “Rogachev”, cook it for exactly two hours, it turns out to be the perfect consistency, thick and tasty. You yourself understand that it is better not to skimp on butter for cream, take at least 82.5%. Take the butter out in advance so that it is soft (do not melt!) and mix well with a mixer with condensed milk until smooth.
As soon as the cakes have cooled, immediately generously grease each cake with cream, and the top layer too.
Now we need our trimmings from the cakes. We pass them through a meat grinder and cover the entire surface of the cake. You'll have to tinker a little with the sides, but beauty, as usual, requires sacrifice. This time I made a cake for a children's party, so I decorated it with chocolate bears.

Real condensed milk is called “Whole condensed milk with sugar” and nothing else. It should contain: whole cow's milk and sugar and no more dyes, stabilizers or anything else.

You will also need sour cream for the cream.. It is highly desirable that this also be a natural product, which includes cream and sourdough. You will need sour cream with at least 25% fat content. It mixes well with sugar, and the cream turns out thick and tasty.

  1. Preheat the oven to 200°C. Combine butter, honey and sugar in a saucepan. Place on low heat.

  2. In a separate bowl, beat the eggs. When the butter-honey-sugar mixture is warm, add the beaten eggs. Heat the mixture and stir with a spatula until the butter and sugar have dissolved. Keep the saucepan on the heat for another 5 minutes until white foam appears. It occurs from heating. There is no need to boil the mixture under any circumstances. Add the baking soda, wait a minute for it to “open” and remove the saucepan from the heat.

  3. Pour the egg liquid into the mixer bowl and add the flour. At medium speed, knead the dough until smooth. Form the dough into a ball, dust it with flour and leave it for 5 minutes.

  4. Divide the resulting dough into 8 parts with a knife; they will make the same number of cakes. Form 8 small dough balls and cover them with cling film.

  5. Dust a cutting board with flour and roll out each bun with a rolling pin into a pancake with a diameter of slightly more than 24 cm. Pierce each cake with a fork along the entire plane.

  6. Place the crust on greased parchment paper. Bake each cake for 2 minutes at 200°C. While you bake one cake, cover the rest with film so that they do not dry out.
  7. As soon as you take the first cake out of the oven, let it cool for a couple of minutes and cut out a circle with a diameter of 24 cm from the cake. To do this, it is convenient to use a baking dish with this diameter. Remove the bottom of the pan, place the sides of the pan over the crust and press out a circle.

  8. Thus, make 8 neat, identical, round cakes and stack them one on top of the other.

  9. Place any leftovers outside the pan onto a baking sheet and place in the oven for another 5 minutes. They should tan to an amber brown color.
  10. Using a blender, grind the amber scraps into crumbs.

5. Remove the pan from the stove and add flour in a thin stream.

6. Knead well, divide the resulting dough into 5-9 parts and cover.

7. Roll out the dough. You can add flour little by little to prevent it from sticking to your hands. Cakes can be made with a height of one to four millimeters.

8. Place the dough on a greased baking sheet and bake at 215 degrees. The cakes are quickly baked until golden brown; just keep them in the oven for about five minutes.

9. Now make the cream. Dilute flour into heated milk, beat well (preferably with a mixer).

  4. Sift the flour and gradually add it to the same deep bowl. Mix well with a spoon or mixer at medium speed. Our dough should be elastic and not stick to your hands. After we knead the dough, we send it for 30 minutes in the refrigerator.




  5. Sprinkle flour on the surface where we will roll out the dough. Take the cooled bun out of the refrigerator and divide it into 6-7 pieces.
  6. Now we begin to roll out each piece thinly. Take a plate of a suitable shape, place it on the rolled out dough and trim off the edges protruding beyond the plate.

  7. Sprinkle round cakes with flour to prevent sticking. Then preheat the oven to 180 degrees and start baking the cakes. Every bakes for 6-8 minutes. Once the cake has browned, remove it to a flat surface. When removing and folding the cakes, be careful - they are thin and can be easily damaged.
